Ingredients for Sofrito:

  • ¾ cup Diced Onions
  • ¾ cup Diced Red & Green Peppers
  • 2 tsp Minced Garlic
  • ¼ cup Cilantro
  • 2 ½ Tbsp Olive Oil

Ingredients for the Rice:

  • 2 cups Brown Rice
  • 4 cups Cubed Chicken
  • 3 ½ cups Chicken Stock
  • ½ cup Peas
  • ½ cup Diced Carrots
  • ½ cup White Wine
  • 1 Tbsp Vinegar
  • ½ tsp Turmeric
  • ¼ tsp Black Pepper
  • ¼ cup Olives with Pimentos
  • ½ tsp Oregano
  • 2 Bay Leaves

Directions:

  1. Put the Sofrito ingredients in a blender, sauté on medium heat with a little olive oil
  2. Add the chicken and brown for about 6 minutes
  3. Add the rest of the ingredients and bring to a boil. Reduce heat to a simmer and cover.
  4. Cook for 35 minutes or until done.
