Arroz con Pollo

Ingredients for Sofrito:
- ¾ cup Diced Onions
- ¾ cup Diced Red & Green Peppers
- 2 tsp Minced Garlic
- ¼ cup Cilantro
- 2 ½ Tbsp Olive Oil
Ingredients for the Rice:
- 2 cups Brown Rice
- 4 cups Cubed Chicken
- 3 ½ cups Chicken Stock
- ½ cup Peas
- ½ cup Diced Carrots
- ½ cup White Wine
- 1 Tbsp Vinegar
- ½ tsp Turmeric
- ¼ tsp Black Pepper
- ¼ cup Olives with Pimentos
- ½ tsp Oregano
- 2 Bay Leaves
Directions:
- Put the Sofrito ingredients in a blender, sauté on medium heat with a little olive oil
- Add the chicken and brown for about 6 minutes
- Add the rest of the ingredients and bring to a boil. Reduce heat to a simmer and cover.
- Cook for 35 minutes or until done.
