Ingredients:

  • 3 Tbsp Fresh Basil, chopped
  • ⅛ tsp Rosemary
  • 2 Cloves Garlic, Minced
  • 4 Scallions (both white and green parts)
  • 1 to 1 ½ pound Fish Fillets, in equal portions
  • Salt and Freshly Ground Black Pepper, to taste
  • 1 tsp Lemon Juice
  • 1 tsp White Wine
  • 1 Tbsp softened Butter
  • 1 cup Carrots, julienned
  • 1 cup Zucchini, julienned
  • 1 cup Onion, julienned

Directions:

  1. Heat the oven to 450°F.
  2. Create packages of parchment paper in which to cook the fish.
  3. Season the fish with salt, pepper, and lemon juice, and spread the top with ¼ tsp of butter.
  4. Sprinkle the fish with the cut herbs and the white wine. Seal the packages and bake on a sheet pan until puffy and browned, about 8 minutes.
