Fish en Papillote

Ingredients:
- 3 Tbsp Fresh Basil, chopped
- ⅛ tsp Rosemary
- 2 Cloves Garlic, Minced
- 4 Scallions (both white and green parts)
- 1 to 1 ½ pound Fish Fillets, in equal portions
- Salt and Freshly Ground Black Pepper, to taste
- 1 tsp Lemon Juice
- 1 tsp White Wine
- 1 Tbsp softened Butter
- 1 cup Carrots, julienned
- 1 cup Zucchini, julienned
- 1 cup Onion, julienned
Directions:
- Heat the oven to 450°F.
- Create packages of parchment paper in which to cook the fish.
- Season the fish with salt, pepper, and lemon juice, and spread the top with ¼ tsp of butter.
- Sprinkle the fish with the cut herbs and the white wine. Seal the packages and bake on a sheet pan until puffy and browned, about 8 minutes.
