Yield: 4 salads

Salad Ingredients:

  • 3 cups Chopped Romaine Lettuce
  • 1 ⅓ Tbsp Mint
  • 1 ⅓ Tbsp Fresh Oregano
  • ¼ cup Diced Cucumber
  • ⅛ cup Julienned Onions
  • ¼ cup Diced Plum Tomatoes
  • ¾ cup Crumbled Feta
  • 3 ounces of Cooked Salmon
  • 1 Lemon, Cut into 4 Wedges
  • 2 Grilled Flatbreads
  • Pita Croutons

Directions:

  1. In a large mixing bowl combine lettuce, mint, vegetables, and baked pita wedges.
  2. Toss with 1 ounce of dressing.
  3. Place salad mix on top of grilled flatbread.
  4. Place cooked salmon on top of mixed salad and garnish with lemon wedge, chopped oregano and Feta cheese.

Fatoosh Dressing Ingredients:

Yield: 4 ounces of dressing, enough for 4 salads

  • 1 Tbsp Lemon Juice
  • 1 ⅜ Tbsp White Vinegar
  • ⅔ tsp Minced Garlic
  • 1 Tbsp Olive Oil
  • 1 ⅜ Fresh Thyme
  • ⅓ Cayenne Pepper
  • 1 ⅜ tsp Granulated Sugar

Directions:

  1. Combine all ingredients in a stainless steel or glass bowl.
  2. Mix well.
