Mediterranean Salmon Fatoosh Salad

Yield: 4 salads
Salad Ingredients:
- 3 cups Chopped Romaine Lettuce
- 1 ⅓ Tbsp Mint
- 1 ⅓ Tbsp Fresh Oregano
- ¼ cup Diced Cucumber
- ⅛ cup Julienned Onions
- ¼ cup Diced Plum Tomatoes
- ¾ cup Crumbled Feta
- 3 ounces of Cooked Salmon
- 1 Lemon, Cut into 4 Wedges
- 2 Grilled Flatbreads
- Pita Croutons
Directions:
- In a large mixing bowl combine lettuce, mint, vegetables, and baked pita wedges.
- Toss with 1 ounce of dressing.
- Place salad mix on top of grilled flatbread.
- Place cooked salmon on top of mixed salad and garnish with lemon wedge, chopped oregano and Feta cheese.
Fatoosh Dressing Ingredients:
Yield: 4 ounces of dressing, enough for 4 salads
- 1 Tbsp Lemon Juice
- 1 ⅜ Tbsp White Vinegar
- ⅔ tsp Minced Garlic
- 1 Tbsp Olive Oil
- 1 ⅜ Fresh Thyme
- ⅓ Cayenne Pepper
- 1 ⅜ tsp Granulated Sugar
Directions:
- Combine all ingredients in a stainless steel or glass bowl.
- Mix well.
